Fruit Cake

All the fruit and cherries get drunk on Brandy for at least 24 hours. Then we add the rest of the ingredients to the party. We can leave the nuts out if you want (but we wont guarantee it ‘nut free’ as some of the other ingredients have been manufactured in an environment which handles nut products - blah blah blah!). The cake is then baked and left to cool. We feed it more Brandy (or we wont if it's for Kids) leaving it both rich and moist. We can also make a lighter Dundee cake if you are not a fan of the traditional fruit cake or a West Indies inspired fragrant and spicy fruit cake. We'll then hand make our own marzipan (without raw eggs - a rare treat!) and cover with with a dabble of apricot.

  • Dark Fruit – traditional for wedding cakes / Christmas cakes etc
  • Light Fruit – a lighter way to enjoy fruit cake – Dundee cake etc
  • Fruit sponge – torn between sponge and fruit cake? You got it!

 

Sponge Cake

The traditional cake but better than mum used to make! Usually with a jam and buttercream filling but anything goes! Check out the list below!

  • Boozy Buttercreams: Kahlua, Cointreau, Malibu, Tia Maria, Limoncello, Amaretto, Baileys (in any of their varieties: coffee, chocolate or mint!), Champagne Vienna Cream
  • Ganache
  • Cream Cheese Frosting
  • Jam: Any flavour you can think of
  •  

 

 Madeira Cake

A slightly heavier version to the sponge cake we offer. Can be made with additional ingredients such as white chocolate to make a white choc mud Madeira cake or fruit to make a fruity sponge. Alternatively we’ll just add a dash of real lemon or orange to give an extra tang!

 

Chocolate Cake

Only Green and Blacks 85% cocoa chocolate will do for this one. Although packed with flavour it is a light moreish chocolate cake that is soft to the touch and velvety to the taste. We don’t do gooey or sticky chocolate though which makes this one of our favourites - you may need to limit the portions!

 

 Marble Cake (picture is marble zebra)

It’s the best of both worlds. Sponge cake and chocolate cake all in one. A fabulous marble effect - leave it plain or top it with buttercream. Gorgeous!

 

 Cupcakes

Any of the above in a cupcake sized serving. Get to the back of the queue you. :)
